Mixed Vegetable Salad with Maple, Soy Sauce and Mustard Vinaigrette
Different kinds of fresh vegetables are tossed with this flavourful vinaigrette, it goes well with any kind of main dish, or even good on its own!

RECIPE INGREDIENTS
1/4 cup of maple, soy sauce and mustard vinaigrette recipe, see the link below
For the vegetable salad:
1/2 each green bell pepper thinly sliced
1/2 each sweet red bell pepper thinly sliced
1/4 each cucumber peeled and cut into match sticks
1 small carrot peeled and cut into match sticks
1 small beet peeled and cut into match sticks
1 small turnip peeled and cut into match sticks
1/2 cup artichoke hearts marinated and well drained, if too big, cut into small chunks
2 each scallions, spring or green onions sliced
1/4 cup cilantro leaves freshly chopped
1 cup cherry tomatoes halved
6 cups mixed greens well washed and drained
DIRECTIONS
Mix well all the salad ingredients except mixed greens with 2 tablespoons of vinaigrette, in a medium bowl, marinated for about 5 minutes.
For assemble the salad:
Divide mixed greens evenly and arrange onto serving plates.
Divide marinated vegetable mixture evenly and place on top of each mixed greens.
Drizzle the reserved dressing on top of the each salad.
Serve.
