Nice looking dish. I like the idea of using tortilla pieces as a bottom and middle layer for a casserole and wonder if some sort of mushroom concoction might also be good used in that way. [Recipe details]

Mexican Deviled Eggs

Mexican Recipes
Quite a nice version of deviled eggs. I used two Jalapeno peppers and it was just the right amount of spiciness for our tastes, not overpowering at all. The capers seemed to add but I couldn't really taste them, just a nice combination of mellow zing from the cumin and Jalapeno. The cilantro garnish really did add to the taste, next time I'll use a bit more garnish, perhaps even place a cilantro leaf in the cavity of each egg before filling. [Recipe details]
