Spicy Corn Dip

RECIPE INGREDIENTS
1 (8 ounce) container sour cream
1 cup mayonnaise
2 (11 ounce) cans Mexican-style corn
4 green onions, chopped
3 jalapeno peppers, seeded and minced
1 (7 ounce) can diced green chiles
1 1/4 cups shredded Cheddar cheese
DIRECTIONS
In a medium bowl, mix together sour cream, mayonnaise, corn, green onions, jalapeno chile peppers, green chile peppers and cheese. Ready to serve!

Quite a nice version of deviled eggs. I used two Jalapeno peppers and it was just the right amount of spiciness for our tastes, not overpowering at all. The capers seemed to add but I couldn't really taste them, just a nice combination of mellow zing from the cumin and Jalapeno. The cilantro garnish really did add to the taste, next time I'll use a bit more garnish, perhaps even place a cilantro leaf in the cavity of each egg before filling. [Recipe details]
